Eggnog Cupckakes: A Mini Holiday Delight

The eggnog cupcake provides a canvas for an endless array of flavor combinations and at no time is this more apparent than during the holiday season.

What better way to capture the holiday spirit in a cupcake than with the richness of eggnog? Below is a recipe for eggnog cupcakes that will fill your mouth and your heart with joy. Even for those that are less than fond of a cup of warm eggnog, the spiced sweetness of these cupcakes is sure to please.

Eggnog Cupcake Ingredients

1/2 cup butter
1 cup sugar
2 large eggs
1/2 tsp vanilla
1 1/2 cups all purpose flour
1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1/2 tsp nutmeg
1/4 tsp cinnamon
1/2 cup eggnog
1 tsp rum (optional)

Frosting Ingredients

1 cup butter
4 cups confectioners sugar
1/4 cup eggnog
cinnamon for topping
cinnamon sticks for garnish (optional)

Eggnog Cupcakes Directions

Preheat oven to 350 degrees.
In a medium bowl combine butter and sugar-beat on medium speed for about 3 minutes or until well combined and fluffy.
Add eggs one at a time, mixing thoroughly after each one.
Add in vanilla and mix well.
In another bowl combine flour, baking powder, baking soda, salt and spices.
Add 1/2 of the flour mixture to the butter mixture, followed by half of the eggnog and half of the rum.
Mix until just combined then add the remainder of the flour mixture and the remainder of the eggnog and rum.
Mix until combined, scraping the sides if necessary.
Pour batter into 12 lined cupcake tins and bake for 18-20 minutes or until the cupcakes spring back when pressed.
Remove the cupcakes from the pan and allow to cool completely on a wire wrack before frosting.

Frosting Directions

Beat butter until soft, add in the confectioners sugar one cup at a time.
When frosting starts to become stiff, slowly add in enough eggnog to bring about a spreadable consistency.
Pipe or spread the icing on to the cupcakes, sprinkle with cinnamon and place a cinnamon stick in the cupcake for garnish.
